

My best peanut butter cookies ever. They are soft, chewy, and yummy. It is the same vintage recipe everybody knows and loves. But what makes these special is the gooey salted caramel bits. One bite into one of these heavenly treats will make you say hallelujah.
Ingredients:
½ cup unsalted butter, softened
1 cup light brown sugar
1 egg
2 tsp vanilla extract
¾ cup peanut butter (plain or chunky)
1½ cups all-purpose flour
¾ tsp baking soda
12-16 soft caramels
Instructions:
Preheat oven to 350 degrees. Prepare baking sheet.
Halves soft caramel candies and set aside.
Cream butter and brown sugar together until smooth. Fold in the egg, vanilla and peanut butter until combined. Pour in flour and baking soda and mix until incorporated. Don’t over mix. Chill dough for about 15 minutes.
Using an ice cream scoop drop batter on your cookie sheet about 2 inches apart. Bake cookies for 10 minutes. Allow to cool for 5 minutes on baking sheet. Then transfer to a wire rack to finish cooling.
Store cookies in an airtight container.
