

I am so excited to share this Jamaican fried rice and peas recipe. It is simple and easy to make. And most of all, it is nutritious.
Recipe
Ingredients:
Two cups overnight rice and peas
One cup medium shrimp (deveined and stripped).
Four slices of bacon
One small onion (finely sliced)
One clove garlic (finely chopped)
Half cup bell pepper (chopped)
One sprig thyme
One and a half cups vegetable oil (melted butter or olive oil)
Directions:
Pour vegetable oil or melted butter in a hot medium saucepan over medium heat. Pour all ingredients (minus except the rice and peas. Sauté for 5 minutes. Then add rice. Keep stirring for another 15-20. Allow more time if you live your fried rice crispy. Either way, the dish is delicious.

Hello, Wayne! I cannot take credit for these meals, my friend. The credit belongs to my other half. Fried rice and peas is a Jamaican thing. It is created with leftover rice and peas, and whatever else one can find to enhance the dish. Unfortunately, I cannot send you a plate because it’s not enough. Keep your chin up, though.
