How to make my milk chocolate chip cookies
How is everybody doing? Be safe out there. Keep your guard rails up because we are living in trying times. My late Nana used to say, “Life comes in seasons.” I think most of us are living through a season of learning. An unforeseen phenomenon has crept upon us and turn our lives upside down. But we are learning as we go.
Today I would like to share my milk chocolate cookies with pecans recipe. It is easy to make. These cookies are chewy, but you can add a quarter cup of applesauce to make them less chewy.
Ingredients:
- 10 ounces baking chocolate bar, broken into small pieces
- 1/2 stick unsalted butter, (room temp)
- ¼ cup of coconut oil
- ½ cup can sugar
- One cup dark brown sugar, (firmly pack)
- Three eggs
- one teaspoon pure vanilla extract
- Two and ¼ cups of all-purpose flour
- One teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1/4 cup baking cocoa powder
- Two cups milk chocolate chips
- One cup chopped pecans
Directions:
Melt chocolate pieces in a heatproof bowl or saucepan. Stir continually until smooth.
In a large bowl, cream the butter, cane sugar, and brown sugar with an electric mixer on medium-high speed until light and fluffy. Reduce mixer speed to low-medium and add eggs and vanilla. Use a rubber spatula to scrape bottom and side of the bowl.
In a separate bowl, sift dry ingredients, flour, baking powder, baking soda, salt, and cocoa powder. Add half of flour mixture to the creamed mixture. Mix well. Add half of the melted chocolate and stir well until ingredients are well blended. Add the remaining flour mixture, then add the remaining chocolate. Mix thoroughly. Stir in chocolate chips and pecan. Cover and refrigerate for approximately one hour.
Preheat oven to 350 degrees Fahrenheit. Line cookie sheets with parchment paper.
Use an ice cream scoop or a to drop the dough two inches apart on the prepared cookie sheet.
Bake dough for 15-20 minutes, depending on your oven. Transfer cookies to a wire rack to cool. You may store cookies in an airtight container at room temperature for up to one week.
