Cream Cheese Topping Grape Nut Cake

This yummy grape-nut cake is another of my easy-to-make desserts. The ingredients are similar to those of my vanilla cake, except for the grape nuts. Grape nuts are often added to cereals and some ice cream

  • 2 1/4 cups of All-Purpose Flour, sifted
  • 3/4 teaspoon of regular or kosher salt
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • One teaspoon cinnamon powder
  • One teaspoon allspice
  • One cup granulated sugar
  • 1/4 cup grape-nuts (or any other nuts of your choosing)
  • 3/4 cup plus water
  • 3/4 cup vegetable oil
  • One cup granulated sugar
  • 4 1/2 tablespoons cider or white vinegar
  • One tablespoon vanilla extract
  • 1/2 teaspoon almond extract

1 LB store brand or homemade cream frosting

  1. Preheat the oven to 350°F. Line an 8″ square or 9″ round cake pan with parchment paper and set it aside.
  2. To make the cake:  Whisk together the flour, salt, baking soda, cinnamon powder, allspice, and baking powder in a medium-sized bowl, and set aside
  3. In a separate bowl, whisk the water, vegetable oil, and the sugar
  4. Then add the wet ingredients to the dry and stir until combine.
  5. Next, fold in the grape-nuts
  6. Next, gently pour the batter into the prepared pan.
  7. Bake, the cake for 32 to 35 minutes, or until a toothpick inserted into its center comes out looking clean.
  8. Remove the cake from the oven and allow it to cool in the pan for ten minutes. At this point, you either serve the cake warm or allow it to cool completely before applying the frosting.
