Classic Banana Muffins


  • 1 1/2 cups all-purpose flour 
  • 3/4 cup granulated sugar 
  • One teaspoon baking powder
  • One teaspoon baking soda
  • 3/4 teaspoon salt
  • One teaspoon ground cinnamon
  • 1 1/2 cup mashed overripe bananas 
  • 1/2 cup unsalted butter melted 
  • Two large eggs
  • One teaspoon vanilla
  • Two tablespoons molasses


  • Preheat the oven to 400F. Line a 12-cup muffin tin with paper liners.
  • Whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  • In a medium bowl, whisk together banana, molasses, butter, eggs, and vanilla, until incorporated. 
  • Pour the banana mixture into the flour mixture and stir until combined. Then divide the batter among each paper liner. 
  • Bake batter for about 5 minutes, then reduce the oven temperature to 350F and continue baking for another 12-15 minutes or until the top of each muffin is golden brown. 
  • Let muffins cool in the pan for a few minutes. And serve warm or remove them from the pan and cool completely on a wire rack.
