Hazelcran Banana Bread


  • 1 cup mashed ripe bananas 
  • 3/4 brown cup sugar
  • 1/2 cup virgin Olive oil
  • Two eggs
  • One teaspoon vanilla
  • 1 cup whole wheat pastry flour
  • 1 cup all-purpose flour
  • One teaspoon baking powder
  • One teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup toasted nuts (I use hazelnuts)
  • One cup dried cranberries soaked and drained


  1. Preheat oven to 350° F.23
  2. Prepare a standard loaf pan.
  3. Mash bananas with a fork or a wooden spoon and measure out one cup.
  4. Place mashed bananas in a bowl and add sugar, oil, eggs, and vanilla. Then beat the mixture with a hand or stand mixer on high speed for one minute.
  5. Stir in all-purpose and whole wheat flours-baking powder and baking soda by hand until almost combined (no mixer).
  6. Fold in nuts and cranberries. Do not over mix.
  7. Next, pour the batter into the prepared loaf pan. Bake the batter for about 55-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes.
