Peanut Butter Banana Cake



  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup butter or margarine softened
  • 1/2 cup virgin olive oil
  • Two eggs
  • One teaspoon vanilla
  • 1/2 cup milk/buttermilk
  • 1 cup mashed bananas (blended)


  • 2/3 cup peanut butter
  • 2 cups powdered sugar
  • 1 1/2 teaspoons vanilla
  • 1/3 cup milk
  • Heat oven to 350°F. Grease bottom and sides of 1 (13×9-inch) pan with shortening; lightly flour. 
  • Whisk the flour, baking soda, cinnamon powder, and salt in a medium bowl and set aside. 
  • In a large bowl, beat the sugar and the butter and olive oil with an electric mixer on high speed until the mixture is fluffy-constantly scraping the bowl. 
  • Next, beat in the eggs and the vanilla.
  • Next, gradually beat in the flour mixture alternately with the milk until the mixture is smooth.
  • Next, stir in the banana.
  • Lastly, pour the mixture into the pan.
  • Bake in a 13×9-inch pan for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. 
  • Allow the cake to cool in the pan. After about 5-10 minutes, remove it to a cooling rack. Cool completely, about 1 hour.

Method For Frosting

Use an electric mixer set to low speed-beat peanut butter and powdered sugar until blended. then add vanilla and 1/4 cup milk; beat until smooth and spreadable. (beat in more milk if necessary). Frost cake, and allow to set before cutting.
